Police have been investigating an earlier break-in and arson.
Around an hour before the fire broke out, sometime between 12 midnight and 1am, the young boy in these pictures was spotted filling up a petrol can at Tesco Extra petrol station off Fitzwarren Street on Salford precinct.
The boy appears to be in his teens or younger.
He was wearing black gloves, a black or dark blue puffa jacket, a dark-coloured beanie hat and dark trousers.
The petrol station is around half a mile from the cafe.
Investigators found a petrol can dumped in the burned-out shell of the cafe building after the fire was extinguished.
Police believe the boy may have useful information and are keen to eliminate him from their enquiries.
Anyone who recognises the boy is asked to come forward and make themselves known to Greater Manchester Police by calling 101.
